Macadamia-Coconut White Chocolate Latte (low carb, sugar free, keto)

I love matcha latte made with unsweetened almond milk and I'm not a big fan of white chocolate or cocobutter but when I saw this recipe https://www.gnom-gnom.com/white-chocolate-keto-bulletproof-matcha-latte/ I imagined my matcha latte to be richer and creamier and hoped the macadamia milk would add a wonderful macadamia flavor.
Can you tell, I had never had macadamia milk before? Macadamia nuts are on the pricier side where I live and so is the milk, so I never wanted to splurge on buying it in case it ended up not having much flavor. Fortunately, or unfortunately if you are looking at my food budget, I found it had a wonderful flavor of macadamia nuts. Cocoa butter is another food I don't stock in my kitchen since I'm not fond of white chocolate and I didn't really want to spend $7-8.00 on an 8 oz.bag for 1 tablespoon of cocoa butter to test out the recipe, and I wasn't about to use white chocolate chips filled with a bunch of refined sugar so I was very excited to find
both Walmart and Amazon now sells a brand of stevia sweetened chocolate chips (Bake Believe) and they have a white chocolate version! Plus they were only $3.99 or a 9 ounce bag. They have milk chocolate and dark chocolate too like Lily's brand and for a lot lower cost. The chips are slightly larger in size than Lily's too but the flavor is much like Lily's. Yes, I bought a bag of dark chocolate chips and tasted them side by side with Lily's.
I modified gnom-gnom's recipe by adding a bit of full fat coconut milk for extra creaminess and using the stevia sweetened white chocolate chips instead of cocoa butter and the result was amazing. It is so rich and creamy with a subtle flavor of both macadamia and coconut plus the calming benefit of the L-theanine in the matcha it is the perfect drink to have before bed, when you are stressed out or just want to indulge without guilt.

Macadamia-Coconut White Chocolate Matcha Latte (Low Carb, sugar free, keto) 3/4 cup unsweetened vanilla macadamia milk (I used this brand) (or your favorite unsweetened plant based milk)* 1/4 cup water 2 tbsp. canned full fat coconut milk (I used this brand) (can be omitted, if desired)* 4 tsp. stevia sweetened white chocolate chips (I used this brand) (or chopped coconut butter) 1/2-3/4 tsp. pure matcha tea powder (I used this brand) zero carb sweetener to taste (I used stevia) 1. In a microwave safe mug or 2 cup glass measure, combine macadamia milk, water and coconut milk. Heat until hot. Pour into a blender or a tall and deep immersion blender cup, if not using a 2 cup liquid measure. Add white chocolate chips or cocoa butter. Let stand several minutes to soften chocolate and cool down milk mixture slightly. Add matcha powder; blend with immersion blender or blender with vented lid, be sure to vent lid as pressure from hot milk can force the lid off a tight blender causing hot liquid to spray all over. Sweeten to taste and re-blend to dissolve sweetener. Pour into a mug and enjoy!
*I recommend using the coconut milk for a richer, keto version of this drink. I also recommend using a creamier plant based milk like macadamia or cashew milk compared to a thin and refrigerated milk like coconut milk. With the coconut milk, I drink it as dessert.
