Chocolate-Almond Butter Nut Clusters (sugar free, low carb, keto)

Just because you crave something sweet and chocolatey doesn't mean it has to be bad for you.
These aren't your everyday nut clusters, they have almond butter, chia seeds and flax meal for extra fiber and omega-3's. They are also sugar free without artificial sweeteners.
For lovers of dark chocolate use the unsweetened chocolate and stevia sweetened chocolate chip version instead of all stevia sweetened chocolate chips.
Chocolate-Almond Butter Nut Clusters (Sugar Free, Low Carb, Keto) 2 net carbs using 1-1/2 oz. unsweetened chocolate, 1-1/2 oz. stevia sweetened chocolate chips, and optional coconut. 1/2 cup stevia sweetened chocolate chips or 1-1/2 ounces unsweetened chocolate, chopped and 1-1/'2 ounces stevia sweetened chocolate chips (I used this brand of chips) 1/3 cup creamy almond butter (I used this brand) 1 tbsp. coconut oil (I used this brand) Stevia equivalent to 3 tablespoons sugar (if using unsweetened chocolate and chocolate chips) (I used this brand) 1/4 tsp. almond extract 1/2 cup sliced almonds 1/2 cup raw pumpkin seeds (I used this brand) 1/4 cup ground flax meal (I used this brand) 1/4 cup unsweetened shredded coconut, optional 1 tbsp. chia seeds Coarse salt, smoked salt, red pepper flakes, optional 1. Line a medium baking pan with wax paper and place in freezer. 2. In a medium microwave-safe bowl, combine chocolate(s), almond butter and coconut oil. Microwave on High 60 seconds, stirring until melted and smooth. Add 15 seconds if chocolate is not fully melted, re-stir to melt. Stir in stevia if using the unsweetened chocolate and stevia sweetened chocolate version, and the almond extract. 3. Add remaining ingredients except optional salts and red pepper flakes; mix thoroughly to coat all pieces with chocolate and flax is well incorporated. Remove cold baking sheet from freezer. Drop spoonfuls of chocolate mixture onto wax paper, forming 17 clusters. Sprinkle with a small amount of optional salt or red pepper flakes, if desired. Refrigerate until solid, about 30 minutes.
