Egg Free Low Carb Swedish Breakfast Buns

I had a request to make the well loved low carb Swedish Breakfast Buns egg free got right to work and the result was amazing. they are light and fluffy with wonderful pockets of holes inside. I don't know what the professional term is for those lovely holes that are so often missing in low carb breads.
I altered the ingredients a bit from the original recipe by using loose flax eggs, increasing the baking powder and decreasing the salt. Now if you don't eat eggs you can enjoy these wonderful buns.
You can leave out the sesame seeds and sunflower seeds if you like for those of you who don't like seedy breads.
Egg Free Low Carb Swedish Breakfast Buns 3.82 net carbs per bun. 2 tbsp. ground flax meal (I use this brand) 1/2 cup water 3/4 cup almond flour (I use this brand) 2 tbsp. psyllium husk powder 1 tbsp. sesame seeds 1 tbsp. raw or roasted sunflower seeds (unsalted) 1-1/2 tsp. gluten free baking powder (grain free if necessary) (I use this brand) 1/8 tsp. unrefined sea salt (I use this brand) 1/2 cup sour cream or unsweetened Greek yogurt (can be dairy free) 2 tbsp. olive oil or any neutral oil Sesame, caraway, poppy seeds or Everything seasoning, for sprinkling on top, optional 1. Preheat oven to 400F. In a small bowl, combine flax and water; mix well. Set aside for 15 minutes or until mixture gets gelatinous. In a medium bowl, combine almond flour, psyllium husk powder, sesame seeds, sunflower seeds, baking powder and salt; mix well. Add sour cream, flax "egg" mixture and olive oil; mix thoroughly. Let it sit for several minutes to thicken. 2. Scoop into 5 balls using an ice cream scoop, placing onto parchment lined baking pan, flatten slightly, to a 2-1/2 inch diameter. Sprinkle with seeds, if desired. Bake for 20-25 minutes or until golden brown. Cool on wire rack.
