Cauliflower Pizza Mug/Bowl Cake aka Instant Gratification Pizza

I came home starving and miraculously had the ingredients to make Kirbie's Cauliflower Pizza Mug Cake in my refrigerator.
Although Kirbie accurately named this Cauliflower Pizza Mug Cake I think it should be called Instant Gratification Pizza because I was eating this baby in less than 5 minutes!
It doesn't have a traditional crust so you have to eat it with a fork, but it tastes so good, is so easy and it satisfies pizza cravings that you don't even miss a real crust. Considering how hungry I was I didn't bother to chop up the Costco cauliflower rice I had and I accidentally put in a whole egg but it turned out so good I'll make it this way all the time. I used Penzey's frozen pizza seasoning instead of Italian seasoning. If you've never purchased Penzey's frozen pizza seasoning you really should. i won't make pizza without it. It is that good! No, I don't get any compensation for mentioning the seasoning, I just like it that much.
I baked mine in a cereal/soup bowl because I wanted more of a pizza look and it worked great. It took a little longer to cook about 30 more seconds since I used a whole egg. The center was soft but not completely gooey raw. I topped it with some leftover low carb pizza sauce and cooked, sliced mushrooms I had plus a bit of chopped parsley that was also leftover. I really think it was fate that I had all the ingredients and just enough for the one pizza. Strange how that can happen. Of course you can use whatever toppings you like.

Cauliflower Pizza Mug Cake aka Instant Gratification Pizza 1/2 cup frozen riced cauliflower, thawed 1/4 cup finely shredded Parmesan cheese 1 lg. egg 1/2 tsp. Penzey's Frozen Pizza Seasoning 2 tbsp. low carb pizza sauce 2 tbsp. shredded Mozzarella cheese or pizza cheese Toppings of your choice like cooked mushrooms, pepperoni, cooked sausage, chopped bell peppers, etc. A sprinkle of pizza seasoning and crushed red pepper, optional 1. Combine cauliflower, Parmesan cheese, pizza seasoning and egg in a microwave-safe cereal or soup bowl. Mix thoroughly until egg is well blended and all ingredients are coated with egg. Gently pack down cauliflower mixture and smooth surface with the back of a spoon. 2. Cook in microwave on High for about 2 minutes. The "crust" should be set around the edges and soft but not raw in the center. The center will still be slightly gooey. If too raw in the center, cook an additional 20-30 seconds. 3. Spread pizza sauce with the back of a spoon over surface of cauliflower crust. Sprinkle mozzarella cheese over the sauce. Top with your choice of toppings and a sprinkle each of pizza seasoning and red pepper flakes, if desired. 4. Microwave 1 minute or until cheese is melted and center is set.
