Microwave Chocolate Custard-Souffle

These little cups of joy are a cross between custard and a souffle. The raise up as they are cooking and quickly fall, giving them a texture that is a cross between custard and a souffle, so you get the best of both worlds. Since they raise up, make sure you fill the containers between 2/3 and 3/4 full so they don't spill over the edge of the containers onto the floor of the microwave.
I like them best served hot from the microwave but you can refrigerate them and reheat them just until warm, in case you have leftovers.
I love that this is made in a blender, so clean-up is super fast. Plus, cooking them in the microwave makes these desserts ready to eat in less than 10 minutes; perfect for a sudden craving for dessert or if you have people over. Please don't skip the chocolate chips or Confectioners' sweetener on top. The chocolate chips and Confectioners' sweetener make the perfect pretty topping, so don't skip them.
Microwave Chocolate Custard-Souffle 3.34 net carbs per serving not including the Pyure sweetener as it shouldn't increase blood sugar levels. 1 cup unsweetened almond or other unsweetened plant-based milk 4 oz. cream cheese, softened 1/4 cup butter, melted 1/2 tsp. vanilla extract Zero carb dry sweetener equivalent to 6 tablespoons sugar (I used 3 tablespoons Pyure) 3 tbsp. unsweetened cocoa powder (I used this brand) 1/2 tsp. non-GMO Gluten Free baking powder (I used this brand) 1/2 tsp. gluccomanan powder or xanthan gum (I used glucomannan) 1/8 tsp. unrefined sea salt (I used this brand) 4 tsp. stevia sweetened chocolate chips (Lily's brand) Confectioners' style (powdered) sweetener like Swerve 1. In a blender container, combine all ingredients in order given except chocolate chips and Confectioners' erythritol; blend until smooth and thoroughly mixed about 1 minute. Pour equally into 6 six ounce microwave safe custard cups or ramekins. Place in a circle on rotating microwave plate. Mixture will rise so you must allow room. 2. *Microwave on High 4-5 minutes or until edges are set and center is jiggly: sprinkle each with chocolate chips. Microwave 1 minute longer.
