Broccoli-Cheddar Bread

I should have called this Broccoli-Cheddar Cake because it is so tender, moist, fine crumbed and cakelike but bread it is. :-)

This would be great topped with a Cheddar cheese sauce, a mushroom sauce, creamed tuna or chicken sauce, topped taco meat and a nacho cheese sauce. I bet split and topped with a soft cooked egg and Hollandaise sauce would be amazing.

But you don't need to go to the fuss of making a special sauce, jJust warm up a slice and spread it with softened butter for an out this world experience! You can really taste the cheese when it is warmed up a little.

Broccoli-Cheese Bread 3.27 net carbs per piece. 220 gm raw broccoli (about 8 oz.) or 2 cups riced broccoli 210 gm (2 cups scooped) almond flour (I use this brand) 54 gm (1/2 cup) coconut flour (I use this brand) 44 gm (1/3 cup) hemp seeds or sesame seeds (I use this brand) 2 tsp. (8 gm) non-GMO baking powder (grain-free if necessary) (I use this brand) 1/2 tsp. baking soda 1/2 tsp. (3 gm) unrefined sea salt (I use this brand) 1/2 tsp. garlic powder 3 large eggs 1/2 cup salted butter, melted 1 cup buttermilk or sour plant based milk (I sour almost a cup of milk with a tablespoon of vinegar) 1 cup shredded sharp Cheddar cheese 1. Preheat the oven to 200°C./392F. (400F.) Grease a 22cm (9 inch square) pan with non-stick cooking spray. 2. Add the broccoli to a food processor and process until rice like or skip this step if using already riced broccoli. Add in the rest of the ingredients except the cheese: blend until thoroughly mixed. Add cheese and pulse until well mixed; spread into the prepared pan. Smooth out the top with the back of a spatula. 3. Bake for 30 minutes temperature registers about 180F. turn offoven and let stand in hot oven for 8-10 minutes or until temperature registers 200F. Allow it to cool in the pan on a wire rack, before cutting. Store tightly covered in the refrigerator. Servings: 16 Nutrition Facts Serving size: 1/16 of a recipe (2.6 ounces).
