Keto Chocolate Caramel Sauce

With all the advertisements for Valentine's Day I've really been craving desserts, especially caramel. It got so bad I actually went into the kitchen at 11:00pm and started to make some keto caramel sauce. I know, really bad that I couldn't wait until morning. :-(

When the sauce was about finished a tiny but persistent thought crept into my head...Mmm, caramel is good but chocolate and caramel is even better. So I grabbed a bag of stevia sweetened chocolate chips and stirred in a tablespoon of them. It was good but I really couldn't taste the chocolate so I added another tablespoon and gave it a taste. I think I heard harps playing! The creamy creamy caramel flavor took on just enough chocolate to know it was there but it didn't mask the flavor of the caramel. I poured it into a jar after eating a spoonful straight off the spoon and refrigerated it overnight hoping it would thicken as it chilled. It was pretty thin right out of the saucepan.

The next morning to my surprise, it thickened enough that I could spread it or roll it into balls for a truffle filling or fat bomb (rolling in chopped pecans would be great). Yes, I waited until later in the day before I briefly warmed the sauce (it only took about 12 seconds in my microwave to soften around the edges) then I stirred it just so the melted sauce blended with the still thick sauce and I poured it over a slice of keto yellow cake and sprinkled the top with some chopped pecans (as shown in the picture).

This is so rich and creamy and wonderful cold off a spoon, spread onto hot keto toast, made into truffles/fat bombs or warmed and poured over cake or ice cream.

The sauce is pretty thin before you add the chocolate and chill it so don't be alarmed. The coconut milk and chocolate help thicken it.

Keto Chocolate Caramel Sauce Approximately 0.59 net carbs per tablespoon not including the maple flavored syrup or powdered/Confectioners' sweeteners as they do not increase blood sugar levels. 3 tbsp. butter (49 gm) (I used salted grass-fed) 1/4 cup Allulose sugar free maple flavored syrup (I used Know brand) 1/4 cup powdered erythrtitol or Confectioners' Swerve 1/3 cup (79 gm) canned full fat coconut milk (I use this brand) 1/8 tsp. unrefined sea salt (normal table grind) (I use this brand) 1 tsp. vanilla extract 2 tbsp. stevia sweetened chocolate chips (I use this brand) 1. Add butter to a small saucepan over medium-low heat and simmer, stirring every so often, until fully browned (about 5 minutes). Stir in the maple flavored syrup then the powdered sweetener; simmer over medium-low heat 45 seconds, whisking frequently. Whisk in the coconut milk and salt. 2. Simmer over medium-low heat for 15-20 minutes. You can whisk this while it cooks, if you like or just leave it simmer without. It works both ways. I just can't keep myself from giving it a whisk every once in a while. Sauce will be fairly thin. Remove from heat, whisk in the vanilla until well blended. Add the chocolate chips and stir or whisk until chocolate is completely melted and mixture is smooth. 3. Pour into an 8 ounce glass mason jar or other heat-proof container. Cool to room temperature then cover and refrigerate. Mixture thickens as it chills, so it can be used as a spread. For a thinner sauce, heat in a microwave about 12 seconds, stirring to blend thicker portion with melted portion. Heating much longer will cause it to be a thin sauce but it will thicken again once chilled. Keep covered in refrigerator to store. Use within 1 week.
