Citrus-Basil Marinated Shrimp or Fish

Do you ever have food cravings? I don't normally, but lately I've really wanted fish and when I saw this recipe for citrus-garlic shrimp it sounded like I could easily adapt it for any fish. When I saw Wild perch was at a pretty good price at the grocery store so I grabbed it.

I wanted a bit more complexity of flavor than the original recipe had, so I added some dried thyme plus some salt and pepper. I wanted to keep the recipe simple so I didn't go crazy with additional ingredients.

This recipe is super easy too, just blend the marinade in a mini-food processor or blender and let it marinade for a mere 20 minutes. Don't marinate longer or your fish will start to "cook" like ceviche. After the brief marinate, I cooked it in a non-stick skillet. This is perfect for a busy week-night meal or a busy weekend meal too. While the fish marinated I prepared the side dishes, so the entire meal was done in just over 30 minutes.

I served it with steamed broccoli and Cheesy-Garlic cauliflower rice (I just added a few spoonfuls of my Cheesy-Garlic Spread to cauliflower rice. It was awesome this way!) for a meal that was better than many I've had in restaurants!

Citrus-Basil Marinated Shrimp or Fish 1 medium-small lemon, peeled and cut into chunks 2 tbsp. olive oil 1 tbsp. lime juice 4 cloves garlic, peeled 1/2 tsp. dried thyme leaves 1/2 tsp. ground black pepper 4 large fresh basil leaves or to taste 1-1/2 lbs. raw shelled jumbo shrimp or boneless-skinless fish filets, I used perch Fresh basil leaves, chopped for garnish, optional 1. In a mini food processor or mini blender, combine lemon, oil, lime juice, garlic, thyme, pepper and salt; process until smooth. Add 4 basil leaves, process until finely chopped; taste and adjust basil amount. 2. Place shrimp or fish in a casserole dish or resealable plastic bag. spread with marinade. Marinate 20 minutes. 3. Heat a large non-stick skillet over medium heat. Add shrimp or fish with any marinade that clings to it, discarding remaining marinade; cook over shrimp 4-6 minutes, or just until the shrimp turn pink and curl, turning several time or cook fish, about 4-5 minutes per side or fish or until the fish flakes easily with a fork.
