No-Bake Brownie Bites

No need to turn the oven on next time a brownie craving hits, these fudgy, No-Bake Brownie Bites will satisfy your cravings!

If you're like me and don't have a lot of mouths to help you eat up a batch of brownies or you just don't want to turn on the oven, these brownie bites are perfect for you. The recipe needs just two bowls to make them and only a few minutes of time to mix them up, before they taunt you from the refrigerator while they are chilling.

I used a pinch of instant espresso powder to highlight the chocolate flavor even more but you can skip it if you want or increase the amount for mocha brownie bites. :-)

My favorite way to make these is to roll them in a combination of chocolate and walnuts, since I love both in my brownies. Choose what makes you happy.

I found placing the chocolate chips in a resealable plastic bag and pounding it with the smooth side of a meat mallet worked exceptionally well and it saved me from dirtying more dishes. I did the same for my walnuts. I bet a mini food processor or mini-blender would work too.

Yes, the recipe can be doubled or tripled, just in case you have to share. :-)

I didn't include the sweetener in the nutritional analysis since it doesn't raise glucose and I didn't include the walnut or chocolate as the choice and amount you use will vary.

No Bake Brownie Bites Less than 1 net carb per brownie bite without the optional walnuts or chocolate. 4 tsp. softened butter 1/4 tsp. vanilla extract 3 tbsp. finely ground almond flour (I use this brand) 4 tsp. high quality cocoa powder (I used this brand) 4 tsp. Confectioners' style (powdered) sweetener (I use this brand), or to taste 1 pinch espresso powder or instant coffee powder, optional (I use this brand) 1 pinch unrefined sea salt (I use this brand) Ground walnuts or ground stevia sweetened chocolate 1. In a small bowl, combine the butter and vanilla extract, mix well. Stir in the almond flour, cocoa, confectioners' sweetener, espresso powder (is using) and salt; mix well. Adjust sweetness. Roll into 5 balls. 2. Gently roll in walnuts, chocolate or a combination of both. Chill at least 30 minutes. They firm up as they chill. Store in a covered container in the refrigerator.
