Smoked Almond Chipotle Sauce

This sauce is amazingly good! It has a bit of heat but isn't hot and has a wonderful smoky flavor. I've gone back several times as I am writing this, for just one more chip and that is after I polished off the plate of meatballs. Yum!

It is super easy to make, just put everything into a blender and blend. No chopping, cooking or stirring and it is so versatile, serve it as a dip for tortilla chips or cooked shrimp, spooned over tacos instead of taco sauce, baked with chicken, cooked with shrimp or served over eggs. I bet you can think of even more ways to use it.

Smoked Almond Chipotle Sauce 2.1 net carbs per 2 tablespoon serving. 1/2 cup smoked almonds (I used Mariani brand) 2 chipotle peppers (this brand has the lowest sugar and no unhealthy fats) 1 clove garlic, peeled Zero carb dry sweetener equivalent to 1 tbsp. sugar or use less, if desired. (I used this brand) 1 tsp. lime juice 1/2 cup water 1/4 cup cilantro leaves, packed 1. In a blender container or mini blender, place almonds, chipotle peppers, garlic, sweetener, lime juice and water; blend until smooth. Add cilantro, pulse to desired consistency. Serve at room temperature or warm. Delicious as a dip for tortilla chips, as a sandwich spread, spooned onto eggs, as a warm dip for meatballs, spooned over tacos, baked with chicken, tossed with shrimp before or after cooking and many other ways, Servings: 6 (2 tablespoons per serving) Yield: 3/4 cup Nutrition Facts Serving size: 2 tablespoons (1.5 ounces).
