This versatile sauce adds a spark of class to a simple pound cake, fruit crisp, French toast or a bowl of fresh fruit. It is grain free, sugar free and can easily be made vegan too.
You can also change this to fit your personal tastes; not thrilled with the taste of cardamom use a bit of nutmeg or ginger instead. Grated orange peel would be delicious added to it also.
Coconut-Maple Dessert Sauce
3/4 cup canned full fat coconut milk (I use this brand) 1/4 cup Confectioners' style (powdered) sweetener (I use this brand) 1-1/2 tbsp. maple flavored low carb syrup such as Allulose or Lankanto brand (I use this brand) 3 tbsp. coconut oil, butter flavored coconut oil or butter 1/2 tsp. vanilla extract 1/4 tsp. ground cardamom or 1/8 tsp. ground nutmeg 1/8 tsp. ground cinnamon
1. In a small saucepan over medium-low heat, combine coconut milk, powdered sweetener and maple flavored syrup, whisk and cook until mixture bubbles.
2. Add coconut oil or butter and continue cooking and whisking for 15-20 minutes or until mixture begins to thicken to a thin sauce. If necessary, reduce heat to keep at a low bubble. Remove from heat; whisk in vanilla, cardamom, cinnamon and a pinch of salt. Cool to room temperature.
3. For a thin sauce, use warm. For a thick sauce, cover and chill several hours. Sauce thickens as it chills. Serve over fresh berries, cakes, cobblers, crumbles, etc. Makes about 6 (tablespoon servings). Yields between 3/4 and 1 cup.
