Warning, do not eat this raw unless you want to fight off vampires or don't plan on speaking to another person for the rest of the day! Cooking with it mellows the strong garlic flavor.
I made this recipe to stuff some Keto rolls I made to have a pull-apart garlic bread and it was delicious that way, (The photo is of the roll stuffed with the cheesy garlic spread before it was baked) but I had leftover spread so I tossed it in with a cauliflower rice and baby spinach mixture I made for dinner and loved it that way too.
After loving it with the rolls and cauliflower, all sorts of luscious food combinations came to my mind. I haven't tried these yet, but I bet it would be so good warmed with cooked pasta, or cooked broccoli, or as the filling for a grilled cheese sandwich and served with a cup of hot marinara sauce or pizza sauce for dipping.
Cheesy Garlic Spread
2 cups shredded Mozzarella cheese (8 oz.) 1/2 cup salted butter, softened 3 tbsp. extra virgin olive oil 6 lg. garlic cloves, peeled 3 tbsp. grated Parmesan cheese 1-1/2 tsp. dried oregano leaves 1/2 tsp. crushed red pepper flakes 1/4 tsp. unrefined sea salt 1/4 tsp. ground black pepper
1. Combine all ingredients in a food processor, process until smooth with no chunks of garlic or butter, scraping bowl as needed. Store in a covered glass container in refrigerator.
2. Delicious added to hot cooked pasta, cauliflower rice, spread on bread or rolls and broiled or baked, tossed with hot cooked broccoli, and used as a grilled cheese filling. The possibilities are endless!
