Chocolate-Almond Toffee Bites (Vegan, Keto, Dairy Free, Low Carb)

These delicious sweet little treats have a chewy almond-toffee center with a hint of maple. The chocolate topping seeps into the nooks and crannies of the filling giving each bite a taste of creamy chocolate. They are rich so you only need 1 or 2 to satisfy your sweet tooth.
My recipe was inspired by Christina's recipe.
Only 1.12 net carbs per bite (not including the sweeteners as they do not increase glucose.)
Chocolate-Almond Toffee Bites 4 oz. sliced almonds with the skins on (not slivered) 2 tbsp. Brown Swerve or other zero carb brown sugar substitute (I use this brand) 2 tbsp. low carb maple flavored syrup (maple Allulose, Lakanto, etc.) (I use this brand) 1/16 tsp. unrefined sea salt or to taste (I use this brand) Topping 1/4 cup solid coconut oil (I use this brand) 2 tbsp. unsweetened cocoa powder (I use this brand) 2 tbsp. Confectioners' style (powdered) sweetener like Swerve (equivalent to 2 tablespoons confectioners' sugar) 1/4 tsp. almond extract 1. Line a 12 cup mini muffin tin with parchment liners. Set aside. 2. In a small saucepan, combine almonds, brown sugar substitute, maple flavored syrup and salt. Cook and stir over medium heat until the sugar is melted, the almonds begin to give a wonderful aroma and mixture begins to stick together, about 4 minutes. Immediately spoon into lined muffin cups, firmly pressing with damp fingers into liners. You may spray spoons or a small cookie scoop with cooking spray to prevent sticking. Place in freezer for 15 minutes while preparing topping. 3. For topping, Add coconut oil, cocoa and confectioners' sweetener in same saucepan (no need to wash it). Heat over medium heat, stirring constantly until coconut oil is melted and mixture is smooth and thoroughly blended. Spoon equally onto almond toffee mixture.
