Italian Roasted Green Beans

My two favorite ways to prepare vegetables are steamed and roasted. Last night I was already using the oven to make Kohlrabi fries, so I decided to roast the green beans I had in the house with a simple yet flavorful combination of seasonings .
You can't go wrong with garlic, herbs and Parmesan, right?
My son usually doesn't say anything about the vegetables on his plate, he just eats them, but last night he complimented these beans! Winner, winner!
I love how just a few seasonings really woke up the flavor of boring green beans.
Italian Roasted Green Beans 12 oz. fresh green beans, trimmed 1-1/2 tsp. high heat oil (avocado, grape seed, etc.) 1/2 tsp. salt free garlic & herb seasoning blend or to taste (I use this brand) 1/2 tsp. Italian seasonings 1/2 tsp. unrefined sea salt or to taste (I use this brand) 1 tbsp. Shredded Parmesan cheese or vegan Parmesan cheese 1. Preheat the oven to 425°F. Line a baking sheet with parchment paper for easy clean-up. 2. Place beans in a large bowl, toss with oil. Add garlic & herb seasoning, Italian seasoning and salt; toss to coat. Spread out on prepared baking sheet to form a single layer. 3. Bake 10 minutes, turn and bake 5 minutes longer or until desired doneness. Remove from oven and sprinkle with Parmesan.
