Sweet Chipotle Spiced Nuts
I love snacking on pretty much any type of toasted nuts, but plain nuts can be boring and manufacturers of nuts usually use a high heat for a short period of time to roast the nuts they manufacture. That damages their nutritional value, so I toast my nuts at home at a lower temperature.
Today was one of those days I didn't want plain toasted nuts, so I threw together some of my favorite spices and these yummy nuts were born. I tossed them with a blend of orange, sweet spices, salt and smokey chipotle powder. They have a bit of heat and a hint of saltiness. I'm have trouble keeping my fingers from wandering to the bowl for just a few more :-) Feel free to adjust the seasonings to your preference.
I chose to toast them at lower temperature to preserve their nutrition and reduce the risk of burning the nuts. Nuts can burn so quickly at higher temperatures and we don't want that to happen.
Recipe can be doubled or tripled and would make great gifts, or snacks for parties.
Sweet Chipotle Spiced Nuts 1/4 tsp. apple pie spice 1/4 tsp. ground cinnamon 1/4 tsp. chipotle powder 1/4 tsp. unrefined sea salt (I use this brand) 1 packet True Orange powder 1-1/4 cups raw nuts (I used 1/2 cup almonds, 1/2 cup walnut halves and 1/4 cup pumpkin seeds) 1/2 cup walnut halves 1/2 cup whole almonds 1/4 cup raw pumpkin seeds 1/2 tsp. coconut oil or any mild flavored oil (I use this brand) 1/4 tsp. liquid stevia (hazelnut, vanilla or unflavored are good choices) (I use Sweetleaf-Sweet Drops brand) 1. In a small bowl,stir together apple pie spice, cinnamon, chipotle powder, sea salt and True orange, Set aside. 2. In a medium or large skillet over medium-low heat, lightly brown nuts, stirring often, about 12 minutes. Remove from heat. Add coconut oil and steviar stirring to coat; Pour into a bowl and sprinkle with seasoning mixture, stir to coat thoroughly. *Note * You can adjust the amount of chipotle, salt and sweetener, if desired and use any combination of nuts or seeds you would like.
