My family loves peanut butter cups so when I found this recipe I knew I had to make it ASAP! We are thrilled with the results!
I always keep a can of coconut milk in the fridge so I never have to wait overnight for my coconut milk to chill. Lol! Just a hint you might like to do too.

Healthy "Reese's" Mousse (Keto, Vegan)
1 (14 oz.) can full fat coconut milk, refrigerate the can at least overnight (I use this brand) 1/4 cup natural peanut butter (just peanuts and salt) (I use this brand) 2 tbsp. cocoa powder (I use this brand) 1/4 tsp. glucomannan powder (I use this brand) or xanthan gum 1 tsp. vanilla extract powdered zero carb sweetener equivalent to 2 tablespoons sugar or to taste. (I used this brand) Whipped coconut cream and/or dark chocolate shavings, if desired for garnish
1. Carefully scoop out the solid cream top of the coconut milk into a mixing bowl. (Save the water for another use)
2. Add remaining ingredients, sprinkling glucomannan powder over the top, do not drop it in a lump on top! Beat on High speed until light and fluffy, scraping sides of bowl. Mixture may be slightly thin. Do not overbeat. Beat only until well blended and fluffy.
3. Pour into 8 small bowls, cover and chill until solid. Garnish with whipped coconut cream or dark chocolate shavings, if desired.
