For those days when you need to grab something nutritious to eat as you race out the door, these granola bars are perfect. They don't crumble into hundreds of pieces when you take a bite, like so many do. They are also great with a mug of coffee or hot tea.
Grab and Go Keto Granola Bars
1.37 net carbs each, not including the sweeteners or chocolate topping.
1/4 cup almond flour (30 gm) (I used this brand) 1/4 cup unsweetened shredded coconut (15 gm) 1/4 cup chopped pecans (30 gm) 2 tbsp. chia seeds (25 gm) 2 tbsp. ground flax (25 gm) (I use this brand) 2 tbsp. Allulose sugar free maple flavored syrup or Lankanto maple flavored syrup (I used this) 1/2 tsp. almond extract 4 drops vanilla steva 1 tbsp. coconut oil, softened Chocolate Base/Drizzle, optional 2-1/2 tbsp. Stevia sweetened chocolate chips (Lily's brand), 1/2 tsp. coconut oil (I use this brand)
1. Preheat oven to 300*F. Line a small baking pan with parchment paper.
2. In a medium bowl, combine almond flour, coconut, pecans, chia seeds, flax. pumpkin pie spice or cinnamon, if using and salt; mix well. Add syrup, coconut oil, almond extract and stevia drops, mix thoroughly until mixture sticks together. Spoon onto prepared baking sheet. Press into a thin rectangle or square (with greased fingers, if necessary.)
3. Bake 10-15 minutes, until edges just begin to turn brown. Remove, cut into 6 pieces and cool completely in pan. When cool, prepare topping/glaze if desired. In a small microwave safe bowl, combine chocolate chips and coconut oil. Microwave on High 20-30 seconds or until chocolate is softened; stir to melt. If mixture isn't smooth, microwave in 10 second intervals, stirring after each until melted. Drizzle over bars or turn bars over and spread on the bottoms. Refrigerate 30 minutes or until hardened. Store in refrigerator if the house is warm.
