Low Carb. Cheesy Cauliflower-Spinach Bake

What do you do when you have leftover cooked cauliflower rice, make this yummy side dish!!

This luscious side dish is packed with vegetables, is creamy and cheesy, and it has a crunchy topping! The best part is you don't need to chop a single ingredient, just stir and bake! If you don't eat dairy, use dairy free cheese and yogurt!

Low Carb Cheddar Cauliflower-Spinach Bake 3 net carbs per serving. 3 cups cooked cauliflower rice (340 gm cooked weight)* 2 cups organic baby spinach leaves (loosely packed into cup) 1 cup shredded sharp Cheddar cheese or your favorite shredded cheese or non-dairy cheese* 1/2 cup unsweetened (7 carbs or less per cup) Greek yogurt or sour cream or thick non-dairy yogurt (I used zero fat Greek yogurt but full fat can be used) 1 tsp. no salt added garlic & herb seasoning (I use this brand) 1/2 to 3/4 tsp. unrefined sea salt (I use this brand) 1/2 tsp. onion powder 1/4 tsp. ground black pepper or to taste 1 egg, beaten Topping 1/4 cup golden flax meal (I use this brand) 1/4 cup shredded sharp Cheddar cheese 1/2 tsp. no salt garlic & herb seasoning blend (I use this brand) 1. Preheat oven to 375°F. 2. In a 2-quart casserole, combine cooked cauliflower, spinach, 1 cup cheese, yogurt, 1 teaspoon garlic & herb seasoning, salt, onion powder and pepper; mix well. Taste and adjust seasonings; stir in egg; mixing well. 3. In a small bowl, combine topping ingredients; sprinkle over cauliflower mixture. Bake, uncovered, 30 minutes or until bubbly. 4. *Notes, use can use non-dairy shredded cheese instead of dairy, but carbs will be higher. For the cooked cauliflower rice, leftover dry cooked cauliflower rice or lightly roasted, steamed or cauliflower rice that was cooked in a skillet or microwave without water can be used (you want it to be dry and "fluffy").
