Flaxseed Breakfast Cookies

Not a fan of big breakfasts or you just don't have the time to make a big breakfast? Give these flaxseed breakfast cookies a try. They are crunchy, lightly sweetened and have a touch of cinnamon.

The best part is they are large cookies but only have 1/2 a net carb per cookie (not including the sweeteners that don't spike glucose levels) and are grain free, gluten free and dairy free!

I made a number of changes to this recipe.

Flaxseed Breakfast Cookies Only 1/2 net carb per cookie! 1/3 cup melted coconut oil (I use this brand) 1/3 cup erythritol (I use this brand) 1/4 tsp. Stevia or equivalent to 1/4 cup sugar (I use this brand) 1 lg. egg 2 tsp. lemon juice or apple cider vinegar 1-1/2 cups ground flax seeds (flax meal) (I use this brand) 1/4 cup hemp seeds (I use this brand) 1/4 cup finely chopped walnuts 1 tsp. ground cinnamon 1/2 tsp. baking soda 1/4 tsp. unrefined sea salt (I use this brand) 1. Preheat oven to 350F. Line a baking sheet with parchment paper. 2. In a medium bowl, combine coconut oil, erythritol, egg, lemon juice, vanilla and stevia; whisk or stir until thoroughly blended. In another bowl, combine flax, hemp seeds, walnuts, cinnamon, baking soda and salt; mix well. Add to coconut oil mixture; mix thoroughly. 3. Using a medium cookie scoop (3 tablespoons) drop 3 inches apart, forming 12 cookies. Press cookies down using wax paper and the bottom of a to form 3 inch cookies. Bake 13-16 minutes or until edges just begin to brown. Cool completely on baking sheet. Store in an air-tight container. I keep mine in the fridge.
