Light & Fluffy Low Carb. Biscuit Squares

These amazing biscuits are very light and fluffy and over an inch tall! I made them so you could gently spread them in a pan, making them so much easier and faster to make.

I made large 2-1/2 inch biscuits with 3.3 net carbs, but you can cut them smaller if you'd like.

Light & Fluffy Low Carb Biscuit Squares 2 cups almond flour (scoop almond flour into cup do not spoon in) (I use this brand) 3 tbsp. coconut flour 1 tbsp. plus 1-1/2 tsp. non-GMO gluten free baking powder (I use this brand) 1/3 tsp. unrefined sea salt (I use this brand) 6 tbsp. butter, melted (I used salted butter) 3/4 cup full-fat plain Greek yogurt 3 lg. eggs 1. Preheat oven to 400°F. Line an 8 x 10 baking dish with parchment paper. 2. In a large bowl, combine almond flour, coconut flour, baking powder and salt; mix thoroughly. In a medium bowl, combine butter and yogurt, whisk to blend. Add eggs; whisk to blend. Pour into dry ingredients and stir to mix well. Spoon into prepared pan, lightly spreading to fill pan. Just to make sure there aren't bare spots. Let stand 2-3 minutes to thicken. Bake 20 minutes, until golden and a wooden pick inserted in center tests clean.
