5 Minute Orange Ricotta Cream with Berries


This dessert is perfect for those times you need a super fast dessert that is rich and creamy, but still low carb. Don't let the 5 minute prep. time make you think it isn't good enough for guests. It's rich texture and fruit topping makes it perfect for guests too!

5 Minute Orange Ricotta Cream with Berries 1 cup full fat ricotta cheese 1/4 cup coconut cream, chilled* 1 envelope True Orange powder or 1/2 tsp. grated orange zest stevia powder or zero carb. confectioners' style sugar substitute equivalent to 5 tablespoons sugar (or to taste) 1/4 tsp. almond extract Fresh berries (blueberries, raspberries, blackberries and/or sliced strawberries) 1. Place all ingredients except fruit in a small deep bowl and blend using an immersion blender with a whisk attachment until very creamy, about 1 minute; adjust sweetness. Spoon into 3 dessert dishes, top each with about 1 tablespoon fresh berries of choice. May be served immediately or covered and chilled until serving time. Servings: 3

*You can chill a can of full fat coconut milk or coconut cream overnight in the fridge then scoop off 1/4 cup of the solidified cream for this.
