5 Minute Orange Ricotta Cream with Berries
1 cup full fat ricotta cheese 1/4 cup coconut cream, chilled* 1 envelope True Orange powder or 1/2 tsp. grated orange zest stevia powder or zero carb. confectioners' style sugar substitute equivalent to 5 tablespoons sugar (or to taste) 1/4 tsp. almond extract Fresh berries (blueberries, raspberries, blackberries and/or sliced strawberries)
1. Place all ingredients except fruit in a small deep bowl and blend using an immersion blender with a whisk attachment until very creamy, about 1 minute; adjust sweetness. Spoon into 3 dessert dishes, top each with about 1 tablespoon fresh berries of choice. May be served immediately or covered and chilled until serving time.
