Smoked Salmon and Black Soybean Tacos

This takes just minutes to put together and is perfect when it is too hot to turn on the oven! I loved the flavor the smoked salmon gave but feel free to use plain cooked salmon, if you don't have or like smoked salmon.

If you want to try the cheese tortillas/wraps (I loved mine in the crisp tortilla) you can purchase them already made (Folio brand) or make your own.

Smoked Salmon and Black Soybean Tacos 1/2 cup (5% fat) plain low-carb Greek yogurt (like Fage brand) or mayonnaise 3 tbsp. chopped red onion 2 tbsp. chopped cilantro 1 tbsp. diced green chilies, (from a 4 ounce can) (I used this brand) 1 tbsp. lime juice 1/2 tsp. chili powder 1/4 tsp. ground cumin cayenne pepper to taste, optional 1-1/2 cups cooked and drained organic black soybeans (About one 15 oz. can)* (I used this brand) 1/2 cup grape tomatoes, halved (50 gm) 6 oz. Smoked Salmon or cooked and cooled salmon unrefined sea salt and black pepper to taste Romaine lettuce leaves or low carb tortillas or low carb cheese wraps or cheese taco shells (your choice of) 1. In a medium bowl, combine yogurt, onion, cilantro, diced green chilies, lime juice, chili powder, cumin and cayenne powder, if desired; mix thoroughly. Add soybeans and tomatoes, mix gently to coat. Break salmon into bite-sized pieces into the bowl; mix gently. Taste, adding salt and pepper to taste and adjusting seasonings. If mixture is too dry, add several tablespoons water or additional yogurt or mayonnaise. 2. Cover and chill or serve immediately. For each serving, spoon a slightly scant 1/2 cup into your choice of lettuce leaves, low carb tortillas, cheese wraps or crisp cheese taco shells. 3. *Note, if you don't eat organic black soybeans, you may substitute and equal amount of blanched and cooled, chopped cauliflower.
