Chorizo Cheddar Burgers
1 lb. grass-fed ground beef 1 lb. grass-fed beef chorizo (chicken chorizo can also be substituted) 1/2 tsp. garlic powder 1/2 cup cilantro leaves, chopped 1/2 tsp. unrefined sea salt 1 cup shredded sharp Cheddar cheese Lettuce, tomato, sliced avocado, sliced onion or favorite toppings, optional Hamburger buns, optional
1. In a large bowl, combine ground beef, chorizo, cilantro, garlic powder and salt; blend with two forks (makes fluffier burgers) until thoroughly blended. Gently mix in cheese. Form into 8 burgers.
2. Heat a large skillet over medium heat until hot. Add burgers (in batches if necessary) and cook 4-5 minutes per side or until desired doneness. Serve on hamburger buns with toppings of choice, if desired.
