Hibiscus Blackberry Cooler
Tired of plain ice tea or lemonade? Hibiscus Blackberry Cooler to the rescue and it has less than 1/2 carb per serving! 1 cup blackberries 8 cups water* 5 hibiscus tea bags (I use this brand) 2 tbsp. lime juice (I use this brand) Zero Carb Sweetener equivalent to 1/2 to 2/3 to sugar (I used stevia) Additional fresh blackberries for garnish, optional 1. Bring 2 cups water to a boil. Add tea and blackberries, mashing blackberries. Turn off heat, cover and let steep 7 minutes. Drain through a strainer. Add sweetener, stirring to dissolve. 2. Pour into a pitcher. Add remaining 6 cups water and lime juice; stir. Refrigerate until cold. Pour over ice cubes and garnish with fresh blackberries and lime wedges, if desired. *For a lightly sparkling drink, reduce water to 6 cups and lightly stir in 2 cups seltzer water just before pouring over ice.
