Skillet Tequila Orange Roughy

One skillet and 10 minutes is all it takes to make this entree. The tequila, butter and cilantro form a light sauce with a hint of tequila flavor.

Skillet Tequila Orange Roughy 2 tbsp. butter or non-dairy butter 1 lg. clove garlic, finely chopped 1 lb. Orange roughly fillets or another thin fish Unrefined sea salt and freshly ground black pepper, to taste 1/4 cup tequila 2 tbsp. chopped cilantro Fresh Lime Wedges 1. Melt butter in a large skillet over medium-low heat. Add garlic and heat several minutes to infuse butter with garlic flavor. Increase heat to medium and cook until garlic is just beginning to brown. Add fish; sprinkle with salt and pepper. Increase heat to medium-high, cook 2-3 minutes or until cooked about halfway; turn. Sprinkle with cilantro and pour tequila into the pan, not over the fish. Cook for 2 minutes or until fish flakes easily with a fork. If sauce has not thickened, remove fish to a covered plate and keep warm. Reduce sauce until slightly thickened.
