Greek Cucumber-Salmon Salad.

This refreshing main dish salad has a bounty of fresh vegetables and salmon, highlighted with a zingy Greek dressing.

1 seedless cucumber, thinly sliced 8 oz. boneless-skinless salmon fillet, cooked and broken into bite size pieces (I used wild sockeye salmon) 1 avocado, cubed 1 lg. Roma tomato, diced 1/3 cup crumbled feta cheese 1/4 cup sliced red onion 2 tbsp. chopped fresh dill weed

2 tbsp. white wine vinegar 2 tbsp. extra-virgin olive oil

1 tsp. salt free Greek seasoning (I use this brand) Freshly ground pepper to taste Unrefined sea salt to taste 1. In a large bowl, combine all ingredients, toss to coat.
