Sugar Free, Dairy Free Double Dark Hot Chocolate Mix


1-1/4 cups coconut milk powder (I use this brand) 1 cup granulated erythritol (I use this brand) 3/4 cup raw cacao powder or unsweetened cocoa powder 6 oz. unsweetened chocolate chips (I use this brand) or 6 ounces of high quality unsweetened chocolate, broken (I use this brand) concentrated stevia powder equivalent to 1-1/2 cups sugar (I used 1-1/2 teaspoons Trader Joe's brand) 1. Place all ingredients in a food processor, process until finely ground. Store in an air-tight container at room temperature out of direct sunlight (if room temperature is lower than 70F.) Refrigerate if the room is warm. 2. To prepare: Heat 8 to 12 ounces of water, milk of choice or a combination of water and milk until very hot. Whisk in 3 tablespoons per 8 ounce mug or 1/4 cup per 12 ounce mag, until chocolate is melted and dissolved. 3. Yield: 12 (12 ounce) servings or 18 (8 ounce) servings. Also delicious added to coffee for a hot mocha drink. Servings: 18 Nutrition Facts Serving size: 1/18 of a recipe (1.1 ounces). Nutritional analysis is based on the dry mix only, not counting the sweeteners since they don't cause a rise in blood sugar. It is based on a 1 cup serving (3 tablespoons dry mix).
