Breakfast Samoa Bowl 1/2 cup unsweetened Greek yogurt or coconut yogurt Cookie Dough 2 tbsp. ground almonds or ground nut or seed of choice 1-3/4 tsp. coconut oil or butter, softened (start with 1-1/2 teaspoons, adding enough to form a dough Zero carb dry sweetener equivalent to 3/4 teaspoon sugar (I used stevia) Pinch unrefined sea salt (I used this brand)
Caramel Sauce 1-1/2 tsp. almond butter or nut or seed butter of choice 1/4 tsp. coconut nectar (can use other liquid sweeteners but may not give a gooey-caramel sauce) 1-1/2 tsp. unsweetened non-dairy milk of choice or dairy milk (may need slightly more or less) Toppings 1 tsp. raw cacao nibs, stevia sweetened chocolate chips or chopped dark chocolate 1/2 tsp. unsweetened shredded coconut, optional (I used this brand)
1. Place yogurt in a cereal bowl. Set aside. In a small bowl, stir together the almond meal or seed meal/flour of choice, sweetener, salt and enough softened coconut oil or butter until it sticks together enough to be able to form balls. Form into small balls. Add to yogurt.
2. In another small bowl, stir together nut or seed butter of choice, coconut nectar or liquid sweetener of choice and enough milk to form a "caramel" sauce; spoon over cookie dough balls. Sprinkle with cacao nibs or chocolate and coconut, if using. Eat immediately or cover and chill for breakfast. Makes 1 serving. Recipe can be doubled, tripled or quadrupled. If you aren't following a low carb diet, adding sliced banana to the yogurt is delicious.
