Asparagus Rolantina

Shh, this is so simple to prepare but is fancy enough for a dinner party and it can be made meatless by using either vegan "meat slices" or eggplant slices. It can also be prepped ahead of time and baked just before dinner too!

Asparagus Rolantia
24 fresh asparagus, trimmed (use medium thick spears) or 1-1/2 lb. broccoli stalks with long stems, cut into thin stalks 8 slices slices about 1/8-inch thick, deli turkey breast (slices about 8 inches long) (or smaller vegan slices, optional) 8 slices slices about 1/8-inch thick, deli ham slices (about 6-8 inches long) (or smaller vegan slices, optional) 12 (1 oz.) slices Swiss cheese or sliced vegan cheese of your choice 1/4 cup organic flax meal, hemp seeds, or almond flour 2 tbsp. grated Parmesan cheese or 1 tbsp. nutritional yeast flakes (I use this brand) 1/4 tsp. garlic powder 1/8 tsp. unrefined sea salt 1 tsp. extra virgin olive oil 1. Preheat oven to 350F. Coat a 13 x 9-inch baking dish with cooking spray. In a large skillet with boiling water; blanch the asparagus or broccoli for 2 minutes or until bright green; drain. 2. For each Rolantina, place one slice of turkey, topped with one slice of ham, topped with 1 slice of cheese on a large plate. Place 3 asparagus spears or 2 broccoli spears on the end; roll up and place seam side down in prepared baking dish. Repeat with remaining ingredients. Place all rolls in prepared baking dish. 3. In a small bowl, combine your choice of flax, hemp seeds or ground almonds with Parmesan cheese or Nutritional yeast, garlic powder and salt. Stir in olive oil; sprinkle over the meat rolls. Bake for 15 minutes or until heated through and cheese is melted. 4. *For a Vegan and "Meat" Free version, you can substitute 8 peeled slices of eggplant cut lengthwise into 1/2 inch thick slices for the turkey and ham. Microwave each slice until it is soft enough to roll but not overcooked. Spread each with 1 tablespoon of your favorite prepared hummus, a slice of vegan cheese, and the asparagus or broccoli.
