Mediterranean Hummus Choodles

What is a Choodle? It is my new favorite vegetable "noodle" made by spiralizing a Chayote squash. Chayote is a low carb squash that doesn't get as mushy as zucchini noodles can. Chayote goes by many names, Cho-Cho, Choko and Mirliton are a few of them. I hope you give it a try!

Mediterranean Hummus Choodles 1 (8 oz.) container (a very scant 1 cup) Mediterranean flavored Hummus or your favorite flavor 1/4 cup dry white wine like Chardonnay 3 tbsp. chopped fresh basil 1/4 tsp. garlic powder or to taste Unrefined sea salt and freshly ground black pepper, to taste 1 tbsp. Extra Virgin olive oil 1 (6 oz.) boneless-skinless chicken breast, cut into strips or 6 ounces vegetarian chicken breast tenders, (I use *Quorn) 8 medium asparagus spears, cut into 1-in. pieces 4 lg. red radishes, cut in half and thinly sliced (1/2 cup sliced) 3 lg. garlic cloves, chopped 2 lg. (9 oz. each) chayote squash, peeled and spiralized Crushed red pepper flakes, optional

1. In a small saucepan, combine hummus, wine, basil and garlic powder. Set aside. 2. In a large skillet over medium heat, cook asparagus, chicken, radishes and garlic in oil until asparagus is bright green and very crisp-tender, 3-4 minutes. Stir in spiralized chayote; continue to cook 2 minutes or until vegetables are crisp-tender or to desired doneness. Meanwhile, heat hummus mixture over medium-low heat until bubbly. Season to taste with salt, pepper and garlic powder. Spoon vegetable mixture onto plates, top with hummus sauce and sprinkle with crushed red pepper flakes, if desired. *Use the vegetarian chicken breasts for a vegetarian option. The brand I use is gluten free but it does contain egg.
