Lime-in-the-Coconut Cooler

Note: The root beer I used doesn't contain artificial colors so it is clear, unlike traditional root beer. Adding a little coffee adds a hint of traditional root beer color but you can omit it and surprise your taste buds with the flavor of root beer without the dark brown color!

Lime-in-the-Coconut Cooler

1 tbsp. freshly brewed coffee (optional)

1-1/2 tsp. fresh lime juice

1/8 tsp. coconut extract

5 drops vanilla stevia (I use this brand)

Ice cubes

8 oz. stevia and erythritol sweetened root beer (I use this brand), chilled

4 tsp. room temperature low-fat canned coconut milk (I use this brand)

In a very large mug, combine coffee (if using), lime juice, coconut extract and stevia; mix well. Add ice cubes filling mug 2/3 full of ice cubes, slowly pour in soda to about 3/4 inch from top of mug. Add coconut milk. Serve immediately.
