I've tried and been disappointed in many low carb and keto muffin recipes. So many are dense, dry or pasty in texture and only rise a small amount. These are like real muffins! They rise to the top of the pan if not slightly above, have a light texture but are not airy like a cupcake (they are muffins after all) and a wonderful crumb texture. Could It Really Be? A Low Carb Bread That Tastes Like Bread (Flax Meal Bread)
With all the fresh garden tomatoes available now, we've been eating a lot of bread/sandwiches and when I came across the photo for this recipe I had to try it. Vegetable Alfredo Flatbread Pizza (gluten free, low carb, keto,vegetarian)
I saw a recipe by Chef David Blonsky, Apeiro Kitchen & Bar that sounded very tasty so I modified it to be low carb and keto. It already was vegetarian. I made this twice, once using a flatbread recipe made out of almond flour and coconut flour but the crust was too soft for my liking. I retested the recipe using an almond butter based crust. This crust could be picked up in my hand. The almond butter crust also increased the protein level of the flatbread pizza. Double win! T
