Parmesan-Rosemary Cauliflower "Cake"
When I saw this beauty at
Annie's site https://www.ciaochowbambina.com/cauliflower-cake/ I knew I had to make it, but change it to a low carb-keto version. The challenge was on. My worries were that it might crumble apart or be dry from the low carb/keto gluten free flours I'd have to use in place of the all-purpose flour Annie used. It looked gorgeous coming out of the oven. The moment of truth was about to happen. I held my breath when I cut it, fearing for the crumbling o

Caramel-Walnut Protein Bark
Just a warning, these are dangerously addicting! If you love the combination of caramel, chocolate crunchy nuts you will love this!!! One serving also has more protein than 1 tablespoon of peanut butter and only 2 net carbs! These do soften quickly so be sure to eat these either frozen or chilled. I'd like to thank Emily from http://prettypies.com/ for my inspiration for this recipe. Caramel-Walnut Protein Bark
1-1/2 cups broken walnuts
1/2 cup coconut oil (I use this bran

Keto Pecan-Pumpkin Maple Syrup
Keto Pecan-Pumpkin Maple Syrup
Less than 1 net carb per 2 tablespoons per serving.
1/2 cup pecans, chopped and toasted
1/4 cup solid pack pumpkin (puree)
8 tbsp Lankanto or Allulose maple flavored syrup (I use this brand)
1-1/2 cups water
2 tsp. pumpkin pie spice or to taste
3/4 tsp. vanilla extract
1/4 scant tsp unrefined sea salt
1/8 tsp. stevia equivalent to 2 tbsp. sugar or to taste, optional (use if you like a very sweet syrup)
1. Combine all ingredients in

Healthy "Reese's" Mousse (keto, vegan)
My family loves peanut butter cups so when I found this recipe I knew I had to make it ASAP! We are thrilled with the results! I always keep a can of coconut milk in the fridge so I never have to wait overnight for my coconut milk to chill. Lol! Just a hint you might like to do too. I made a few small tweaks to the recipe (cut carbs even more) and my version appears below. The original can be found here: http://prettypies.com/recipe/healthy-reeses-mousse-keto-vegan/ Only 2.59

Keto Slow-Cooker Hungarian Chicken Paprikash with Dumplings
I adapted a recipe a friend posted to make it keto friendly and I made it in a slow-cooker. The results were so marvelous! This is very rich so you don't need a huge bowl to fill you up but you'll wish you had more room! The original recipe can be seen here: https://www.justapinch.com/recipes/main-course/chicken/hungarian-chicken-paprikash-chicken-and-dumplings.html I used a keto dumpling and I slightly modified the original dumpling batter if that recipe, my version appears

Grab and Go Keto Granola Bars
For those days when you need to grab something nutritious to eat as you race out the door, these granola bars are perfect. They don't crumble into hundreds of pieces when you take a bite, like so many do. They are also great with a mug of coffee or hot tea. Grab and Go Keto Granola Bars
1.37 net carbs each, not including the sweeteners or chocolate topping.
1/4 cup almond flour (30 gm) (I used this brand)
1/4 cup unsweetened shredded coconut (15 gm)
1/4 cup chopped p

Firecracker Cauliflower
This was so darn delicious! It is like a flavor explosion in your mouth! I reduced the amount of sriracha to give this a bit of heat but not killer hot and regular sriracha has a lot of sugar, so using less or an alternative like the one listed as an ingredient link helps keep the carbs lower. I can see using this sauce to coat chicken breasts, shrimp or salmon too. I made a few changes to the original recipe. https://olivesfordinner.com/2018/08/firecracker-cauliflower.html F

No-Bake Almond Joy Cheesecake Truffles (Keto)
When I saw Sam's picture of these gorgeous truffles I had to make them and I'm so glad I did! https://mouthwateringmotivation.com/2018/01/25/no-bake-almond-joy-cheesecake-truffles-keto/I like mine chilled more than frozen as I think you can taste the flavors better, but if you like them frozen, go for it! Sam didn't list the exact amounts of the topping so when I made them I did weigh them. I also skipped the almond in each truffle as my son dislikes large pieces of nuts in h

Microwave Keto Bread
As you can see from the picture, I toasted this a little too long, so keep the setting low when you toast yours. This bread recipe is perfect when you want a single serving of crunchy bread/biscuit. I was worried it might be dry without a little oil in the dough so I added 1/2 teaspoon oil to the original recipe. I loved how it turned out, crunchy when toasted but not the least bit dry. I spread it with butter and mashed strawberries (quick low carb "jam", lol) to soothe my c
