

Low Carb "Apple" Cider
One of the things I miss as a diabetic is a mug of hot apple cider, so I developed this low carb version.


Roasted Cauliflower with Chorizo
Roasted Cauliflower with Chorizo 2 lb. raw cauliflower florets 1 tbsp. high heat oil (avocado, grape seed, etc.) 1 (12 oz.) pkg. gluten free vegetarian chorizo (I use Tofurky gluten free chorizo) or 1 lb. grass-fed beef chorizo 1 medium onion, chopped 2 lg. garlic cloves, chopped 1 tsp. ground cumin (grass-fed beef chorizo may need 1 additional teaspoon) 3/4 cup coarsely chopped roasted red pepper (I use this brand) 1-1/2 cups vegetarian beef broth or real beef broth 1/2 tsp.

Note: The root beer I used doesn't contain artificial colors so it is clear, unlike traditional root beer. Adding a little coffee adds a hint of traditional root beer color but you can omit it and surprise your taste buds with the flavor of root beer without the dark brown color!
